This warm, cozy single serving Apple Crisp delivers dessert vibes without the sugar crash. Enjoy this sweet and healthy treat!

 

Ingredients:

  • 1 medium apple, diced (optional: you can peel the apple too but I like to keep the peel for the antioxidants & fiber)
  • 1 tsp lemon juice
  • ½ tsp cinnamon
  • ¼ tsp vanilla
  • ½ tsp Truvia brown sugar (or low/no calorie sweetener of choice)
  • ½ tsp cornstarch
  • 4 tbsp rolled oats
  • 1 tbsp vanilla protein powder
  • ½ tsp chia seeds
  • 1½ tbsp unsweetened applesauce
  • 1 tsp Truvia brown sugar (or low/no calorie sweetener of choice)
  • Pinch of salt

 

Instructions:

  1. Preheat oven to 350 degrees.  In a small oven-safe ramekin, mix diced apple with lemon juice, cinnamon, vanilla, sweetener, and cornstarch.
  2. In a small bowl, combine oats, protein powder, chia and salt. Stir in applesauce and sweetener until crumbly. Sprinkle crumble over the apple mixture.
  3. Bake at 350°F for 25–30 minutes, or until the top is golden and apples are soft. Serve warm.
  4. Optional: top with a drizzle of almond butter or a scoop of Greek yogurt on top
