Salmon Cakes
These high-protein salmon cakes are the perfect blend of flavor and function! Easy to make, crispy on the outside and packed with muscle building protein! These cakes make reaching your nutrition goals both delicious and do-able. Serve with a side salad to add fiber and freshness!
Ingredients:
- 3 oz cooked salmon
- 1 tbsp liquid egg white
- 1/4 cup nonfat plain Greek yogurt
- 1/4 cup finely diced bell pepper
- 1/2 tbsp finely diced red onion or green onion
- 1/4 cup panko breadcrumbs
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & pepper, to taste
- Olive or coconut oil spray (for cooking)
Instructions:
In a large bowl, flake the salmon well. Add egg white, Greek yogurt, Dijon, and lemon juice. Mix until combined. Fold in veggies, breadcrumbs and seasonings. Divide mixture into 3 small patties. Spray your air fryer with cooking spray and cook at 375°F for 5-7 minutes.
