Watermelon Feta Mint Salad

One of my favorite summer fruits, this salad featuring watermelon as the star is a refreshing side that feels gourmet, is quick to make and is so good you might want to make a double batch!  Plus this dish is hydrating, low in calories and nutrient-packed. Enjoy!

 

Ingredients:

  • 4 cups watermelon, cubed or scooped into balls
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, chopped
  • Juice of ½ lime
  • 1 tsp (good quality) olive oil (optional)
  • Pinch of sea salt

 

Instructions:

  1. Combine watermelon, feta, and mint in a large bowl.
  2. Drizzle with lime juice and olive oil. Add a pinch of sea salt.
  3. Gently toss and serve chilled.
