Watermelon Feta Mint Salad
One of my favorite summer fruits, this salad featuring watermelon as the star is a refreshing side that feels gourmet, is quick to make and is so good you might want to make a double batch! Plus this dish is hydrating, low in calories and nutrient-packed. Enjoy!
Ingredients:
- 4 cups watermelon, cubed or scooped into balls
- ½ cup feta cheese, crumbled
- ¼ cup fresh mint leaves, chopped
- Juice of ½ lime
- 1 tsp (good quality) olive oil (optional)
- Pinch of sea salt
Instructions:
- Combine watermelon, feta, and mint in a large bowl.
- Drizzle with lime juice and olive oil. Add a pinch of sea salt.
- Gently toss and serve chilled.
