Recipe of the Month: Taco Soup
I am obsessed with this new recipe! It is hearty but still light. It is flavorful and filled with protein, healthy fats and staple ingredients. It is simple and quick to make – and delicious!
Bonus: it is easy to double and triple this recipe for a crowd – like for a Superbowl party!
Ingredients:
1 lb 93% lean ground beef or ground turkey (you could also use ground chicken or vegan meat crumbles)
1/2 yellow onion, diced
1/2 – 1 fresh jalapeño, diced
1 can diced tomatoes
4 cups low sodium vegetable or chicken broth
Salt, pepper, chili powder, cayenne pepper to taste
Garnish: fresh lime juice, diced avocado & tortilla chips (my favorite are Siete brand)
Directions:
In a large soup pot, cook the meat until brown. Add the onion and jalapeño, cooking until tender. Add the can of diced tomatoes and season with salt, pepper, chili powder and cayenne pepper (optional), to taste. Add the broth, cover the pot and let it simmer on low for 20 minutes.
Ladle into soup bowls and garnish with diced avocado, a squeeze of fresh lime juice, and crushed tortilla chips. You could also add shredded cheese and even a dollop of sour cream!
