Recipe of the Month: Salted Peanut Butter Cookies with Mini Kisses
If you’re trying to kick sugar to the curb, or at least eat less of it, try this healthier version of my favorite combination – peanut butter cookies with mini kisses (aka chocolate chips). Made with better-for-you ingredients like almond flour and non-GMO, gluten free chocolate chips, you will fall in love with these sweet & salty treats!
Ingredients:
1 cup almond flour
½ cup PB Fit (plus water to mix in)
1/3 cup agave or pure maple syrup
½ cup Goodsam or Enjoy Life dark chocolate chips (plus a few more for each cookie when they come out of the oven)
Kosher salt
- In a bowl, combine PB Fit and blend with a few tbsp water at a time until you get a creamy (not watery) consistency). Add the almond flour and agave/maple syrup and combine. Stir in dark chocolate chips.
- Roll the mixture into teaspoon sized balls and place them on a cookie sheet lined with parchment paper.
- Press down on them with a fork to create a hashtag pattern.
- Bake for about 10-12 minutes at 350 F.
- Remove from the oven and place a few more dark chocolate chips on top of each cookie, then sprinkle with kosher salt.
- Let cool completely then enjoy!
