This is a high protein pumpkin pudding and it is so good – and good for you!
Pumpkin is a nutrient-dense source of vitamins, minerals, protein & fiber. It has health benefits for the skin, eyes, heart, gut & immunity!
Recipe (makes one serving):
5.3 oz fat free or low fat cottage cheese
1 scoop of your favorite vanilla protein powder
Dash pumpkin pie spice
Cinnamon, to taste
1 oz chopped pecans
Place all ingredients except pecans in a (mini) food processor and blend until smooth & creamy. Transfer to a bowl and sprinkle with pecans. Enjoy!
