Protein-Packed Pasta Summer Salad
Fuel up with fiber, protein, and flavor in every bite.
Ingredients:
- 8 oz Barilla protein pasta (your favorite shape)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, chopped
- ¼ red onion, finely sliced
- 1 cup grilled chicken breast or shrimp, chopped
- ¼ cup feta or goat cheese (optional)
- 2 tbsp olive oil
- Juice of 1 lemon
- 1 tsp Dijon mustard
- Salt, pepper, and your favorite Italian herbs to taste
Instructions:
- Cook pasta according to package directions. Rinse with cold water and drain.
- In a small bowl, whisk together olive oil, lemon juice, mustard, and herbs.
- In a large bowl, combine pasta, veggies, protein, and dressing. Toss well.
- Top with cheese if using. Chill at least 30 minutes before serving.
