Protein-Packed Pasta Summer Salad


Fuel up with fiber, protein, and flavor in every bite.

Ingredients:

  • 8 oz Barilla protein pasta (your favorite shape)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • ¼ red onion, finely sliced
  • 1 cup grilled chicken breast or shrimp, chopped
  • ¼ cup feta or goat cheese (optional)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • Salt, pepper, and your favorite Italian herbs to taste

 

Instructions:

  1. Cook pasta according to package directions. Rinse with cold water and drain.
  2. In a small bowl, whisk together olive oil, lemon juice, mustard, and herbs.
  3. In a large bowl, combine pasta, veggies, protein, and dressing. Toss well.
  4. Top with cheese if using. Chill at least 30 minutes before serving.

This recipe balances macronutrients beautifully – lean protein, healthy fats, fiber-rich carbs—and it’s easy to prep ahead and make bigger batches for summer gatherings. As we transition from summer to school season, this is also a great option to pack for school (or work!) lunches!
