Bold & Bright Broccoli Pesto
This isn’t your basic pesto! It’s beautiful and bursting with flavor – and nutrients like Vitamins C, K, and B9 plus potassium, antioxidants and more!
Whether you are tossing this sauce with pasta or using it as a dip, it’s a great way to sneak in a lot of extra greens in a delicious and enjoyable way!

Ingredients:
- 2 tbsp chopped raw walnuts (or pine nuts)
- 1 cup cooked broccoli
- 1 cup basil leaves
- juice of 1 lemon (about 3 tbsp)
- 2 tbsp nutritional yeast
- 2 tbsp red wine vinegar
- 2 tbsp warm water
- 1 garlic clove, peeled
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/3 cup olive oil
Combine all ingredients in a food processor (click the link for my favorite food processor) until it reached a consistency you like. You can leave it chunkier for more chew or make it smooth for sauce. Pour into a bowl and serve as a dip, or toss with pasta.
My go to for this recipe is to cook up some shirataki noodles and (leftover) chicken then combine it with this light and healthy sauce that takes less than 10 minutes to prepare. Enjoy!
