Lightened Up 7 Layer Dip
Celebrate Cinco de Mayo – or any time you get a Mexican food craving – with this lighter twist on a classic seven layer dip. It’s colorful, satisfying, easy to make and – of course – delicious!
Ingredients:
- 1 cup shredded lettuce
- 1/2 cup canned, rinsed black beans
- 4 oz chopped ground chicken, cooked
- 1/4 cup shredded reduced fat cheddar
- 1/4 cup nonfat plain Greek yogurt mixed with Tabasco, to taste
- 1/4 cup avocado salsa
- Pickled jalapeños & onions, to taste
- Squeeze of lime juice, optional
Instructions:
Spread the shredded lettuce on a plate, then on top of that sprinkle the black beans, chicken, and cheddar. Scoop the yogurt Tabasco mixture on top and then pour the avocado salsa over the top. Add pickled jalapenos and onions to your liking. For a fresh zesty kick, squeeze some lime juice over the top.
This dip can be enjoyed with tortilla chips, veggie scoopers like bell peppers and onion cups, and even eaten straight off the plate with a fork – it’s THAT good!
