High-Protein Stuffed Mushrooms
These High-Protein Stuffed Mushrooms are hearty, flavorful and lean! They make a satisfying appetizer, snack, or light nutrient-dense meal.
Ingredients:
- 20–24 large white mushrooms (approx. 500–600g total mushrooms)
- 1 tbsp olive oil
- Salt & pepper
- 8 oz ground turkey breast (93% lean)
- ¼ yellow onion, diced
- 1 clove garlic, minced
- ½ cup finely chopped spinach
- ¼ cup chopped fresh parsley
- ¼ cup part-skim ricotta
- ½ tsp salt
- ½ tsp black pepper
- Optional: pinch of red pepper flakes
Instructions:
Preheat oven to 400°F. Remove mushroom stems and scoop out a little center to create space. Brush mushrooms lightly with olive oil, season with salt + pepper, and place on a parchment-lined pan or in a mini muffin silicone tray.
In a skillet, sauté onion and garlic until fragrant. Add ground turkey and cook until no longer pink. Stir in spinach until wilted. Remove from heat and mix in ricotta, parsley, salt, pepper, and red pepper flakes.
Spoon filling generously into each mushroom cap. Bake for 18–22 minutes, until tops are lightly golden and mushrooms are tender.
