Greek Chicken Bowl
My Greek Chicken Bowl is macro-friendly and loaded with fresh flavors! Using lean protein and fiber-rich veggies, this is a perfect summer staple because it is a fresh, nourishing meal. It delivers satisfying flavor while keeping calories in check.
Ingredients:
- 4 oz shredded boneless skinless chicken breast
- 1 package palmini rice (you can use quinoa, brown or basmati rice, just adjust the nutrition information below)
- Grated rind of a washed lemon
- 4 oz cherry tomatoes, sliced in half
- Diced red onion (optional)
- 4 quartered artichoke hearts
- 1 tbsp Kalamata olives, sliced
- 3 pepperoncini
- Juice of ½ a lemon
- 2 tbsp tzatziki (store-bought or make your own)
- ½ pita
- Fresh parsley, for garnish
Instructions:
Cook the palmini rice over medium heat until it starts to brown. Transfer to a bowl, and grate the lemon rind over the top of the rice. Top with chicken and vegetables, then squeeze half a lemon over the top. Place a dollop of tzatziki on top, garnish with parsley, and serve with pita triangles.
