Better For You Banana Bread
This banana bread tastes like the classic you grew up with—but without all the sugar and simple carbs that spike blood sugar and cravings. A slice of this banana bread makes a perfect pre-workout meal paired with Greek yogurt to boost protein. You can add protein powder, cinnamon and/or monk fruit to the yogurt to make it like a frosting! Note: I like to eat a slice of this bread fresh from the oven, then freeze individual slices for grab n go meals!
Ingredients:
- 3 ripe bananas, mashed
- 6 tbsp liquid egg whites
- ½ cup plain Greek yogurt
- 1 tsp vanilla extract
- 1½ cups almond flour
- 1 scoop vanilla protein powder (whey or plant-based)
- 1 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
Instructions:
Preheat oven to 350°F and prep a loaf pan with coconut oil cooking spray. In a large bowl, mix mashed bananas, eggs, Greek yogurt, and vanilla. In a separate bowl, whisk oat flour, protein powder, baking soda, cinnamon, and salt. Fold dry ingredients into wet ingredients until just combined. Pour batter into loaf pan then bake for 40–45 minutes, or until a toothpick comes out mostly clean. Let cool before slicing.
