I gave classic meatloaf a fresh Mediterranean twist with this protein-packed Greek-inspired Turkey Meatloaf! Loaded with spinach, feta, Greek olives, and tomatoes, it’s flavorful, satisfying, and an easy way to sneak more veggies into dinner. The tangy feta add so much flavor that this healthier comfort-food favorite feels fresh and lighter than a traditional meatloaf.
Ingredients:
- 1 c panko
- 1/4 cup 1% milk
- 1 egg
- 1 lb 93/7 ground turkey
- 5 oz chopped spinach
- 3/4 cup crumbled feta cheese
- 1/3 cup pitted, chopped greek olives
- 5 oz canned diced tomatoes, drained
- 1 tbsp Worcestershire sauce
- 1 tsp granulated garlic
- 2 tsp oregano
- 1 tsp salt
- 1 tsp pepper
- 1/2 c marinara sauce
Instructions:
Preheat oven to 400 degrees.  In a large mixing bowl combine all ingredients except marinara sauce. I like to wear gloves and combine it all with my hands until all the ingredients are evenly distributed. Try not to over mix. Add mixture to a pre-sprayed loaf pan or on a baking sheet sprayed with cooking spray, form meatloaf mixture into a loaf. Spread marinara sauce on top. Cover with aluminum foil. Bake for 1 hour 15 minutes. Remove the aluminum foil and test to make sure the meatloaf is cooked through. If not, cook at additional 10-15 minute increments. Once cooked, let the meatloaf cool for 5 minutes, slice and serve.
