Pumpkin Spice Energy Balls
These Pumpkin Spice Energy Balls are the perfect grab-and-go snack for busy women who want steady energy without the sugar crash. Made with fiber-rich oats, pumpkin, flaxseed, and protein powder, they taste like Fall in a ball! The pepitas and dark chocolate add the perfect crunch and touch of indulgence. These are an easy, make ahead of time way to fuel your body with wholesome ingredients that support your energy levels through Fall, and every season!
Ingredients:
- 1/2 cup pb fit mixed with water to form peanut butter consistency
- 1/2 cup pure pumpkin puree
- 2 scoops favorite protein powder (vanilla, cinnamon, pumpkin spice or unflavored all will work well) (I use Truvani brand)
- 1/8 cup unsweetened shredded coconut
- 1/8 c ground flaxseed
- 1/8 cup dark chocolate chips or cacao nibs
- 1/8 c toasted pepitas
- 1/8 cup (local, organic) honey
- Pumpkin pie spice , to taste
Instructions:
Mix all ingredients together in a bowl. Roll into 12 balls (I like to wear disposable cooking gloves when I do this, because the heat from my hands helps form the balls but I don’t get the ingredients stuck under my fingernails) and store in an airtight container in the refrigerator.
