Fresh, vibrant, and packed with flavor, this Greek Gazpacho is the perfect addition to any summer meal. This low-calorie, nutrient-dense dish is a great source of hydration, fiber, and essential micronutrients, while the olive oil and fresh herbs add a delicious Mediterranean-inspired touch. Enjoy it as a light side dish, healthy snack, or refreshing accompaniment to grilled proteins.

 

Ingredients:

  • 2 cups ripe tomatoes (chopped)
  • 1/2 medium cucumber (peeled + chopped)
  • 1/2 red bell pepper (chopped)
  • 1/2 garlic clove
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/4 tsp salt, to taste
  • 1 tsp each fresh oregano, dill, parsley

 

Instructions:

Add all ingredients to a blender. Blend until smooth. Pour into a bowl, cover, and chill for at least 1–2 hours (this is key for flavor). Taste and adjust salt, vinegar, or thickness (add a splash of water if needed).

  • Optional toppings (not included in nutrition information below): diced cucumber and tomato, fresh herbs (parsley or basil), crumbled feta, roasted chickpeas, grilled shrimp or shredded chicken.
