Sweet n’ Spicy Corn Salad
This macro-friendly sweet n’ spicy corn salad is a simple and flavorful side dish, topper or party dip! It’s creamy, smoky, tangy … and of course high in protein and low in fat! Enjoy this converted comfort food this summer – and all year round!
Ingredients:
- 1/2 cup corn (fresh, frozen, or canned)
- 1/4 c nonfat cottage cheese
- 1/4 cup chopped cilantro
- 1/4 cup diced bell pepper
- Juice of 1/2 lime
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp onion powder
- Salt to taste
- ¾ oz reduced-fat cotija or feta cheese
- Optional heat elements: finely diced jalapeño and/or a splash of your favorite hot sauce
Instructions:
Sauté corn in a hot pan (no oil needed) until lightly charred (this adds flavor). While it cools, in a bowl mix together cottage cheese, bell pepper, cilantro, lime juice and spices. Fold in the corn, then garnish with cotija cheese plus fresh jalapeño and hot sauce, if using.
Scoop it up with baked tortilla chips, add it on top of grilled chicken bowls or stuff it into lettuce cups. Or, do what I do and eat it with a spoon! Enjoy!
