Takeout Fakeout Egg Roll Bowl
This quick and flavorful egg roll in a bowl is a lighter take on a takeout favorite. It’s a one pan meal packed with lean protein, fresh veggies and Asian spices that will satisfy your tastebuds. You can add a complex carb like brown rice to make it a more filling, balanced meal!
Ingredients:
- 1 lb lean ground turkey (93% or leaner) or ground chicken
- ¼ cup shredded carrots
- ¼ cup diced celery
- 1 tbsp avocado or olive oil
- 4 cups shredded cabbage or coleslaw mix
- 3 cloves garlic, minced
- 1 tbsp fresh or jarred ginger, minced
- 3 green onions, sliced
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Optional: red pepper flakes, sriracha, sesame seeds
Instructions:
Heat oil in a large skillet. Add ground turkey/chicken and cook until browned. Add carrots, celery, garlic, ginger, and half the green onions; cook 1–2 minutes. Add cabbage and stir until it softens (about 5 minutes). Add soy sauce/coconut aminos, rice vinegar, and sesame oil; toss well. Garnish with remaining green onions, sesame seeds and serve hot.
