Lemon Chicken Orzo

Ingredients:
- 6 oz boneless, skinless chicken breast, ground or diced
- ¼ cup dry orzo
- Zest of ½ lemon
- Juice of ½ lemon
- 1 clove garlic, minced
- ¾ cup low-sodium chicken broth
- ¼ cup water (as needed)
- 1 tsp olive oil (optional but included in macros)
- ¼ tsp turmeric
- ¼ tsp dried oregano
- ⅛ tsp ground ginger
- ⅛ tsp black pepper
- ⅛ tsp sea salt
- ½ cup baby spinach, chopped
- Fresh parsley and/or dill (optional)
Instructions:
Toss chicken with lemon zest, garlic, turmeric, oregano, ginger, salt, and pepper. Heat a nonstick skillet over medium heat. Add olive oil, then chicken. Cook 4–5 minutes, just until opaque. Stir in dry orzo and toast 30 seconds. Add chicken broth, lemon juice, and water. Bring to a gentle simmer. Reduce heat to low and cook 10–12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed. Stir in spinach and cook 1 minute until wilted. Adjust lemon, salt, and pepper to taste. Garnish with fresh herbs.
