Single Serving Apple Crisp
This warm, cozy single serving Apple Crisp delivers dessert vibes without the sugar crash. Enjoy this sweet and healthy treat!
Ingredients:
- 1 medium apple, diced (optional: you can peel the apple too but I like to keep the peel for the antioxidants & fiber)
- 1 tsp lemon juice
- ½ tsp cinnamon
- ¼ tsp vanilla
- ½ tsp Truvia brown sugar (or low/no calorie sweetener of choice)
- ½ tsp cornstarch
- 4 tbsp rolled oats
- 1 tbsp vanilla protein powder
- ½ tsp chia seeds
- 1½ tbsp unsweetened applesauce
- 1 tsp Truvia brown sugar (or low/no calorie sweetener of choice)
- Pinch of salt
Instructions:
- Preheat oven to 350 degrees. In a small oven-safe ramekin, mix diced apple with lemon juice, cinnamon, vanilla, sweetener, and cornstarch.
- In a small bowl, combine oats, protein powder, chia and salt. Stir in applesauce and sweetener until crumbly. Sprinkle crumble over the apple mixture.
- Bake at 350°F for 25–30 minutes, or until the top is golden and apples are soft. Serve warm.
- Optional: top with a drizzle of almond butter or a scoop of Greek yogurt on top
