Cottage Cheese Pasta Sauce
Another comfort food converted! This creamy cottage cheese pasta sauce is the perfect blend of comfort and nutrition—rich, tangy, and packed with protein. With just a handful of ingredients you probably already have on hand and a quick spin in the blender, you’ll create a craveable sauce that turns pasta into a satisfying and healthy meal.
Ingredients:
- 1/2 c fat free cottage cheese
- 1 tsp minced garlic
- 1-2 tbsp nutritional yeast
- Juice of 1/2 lemon
- 1/2 tbsp grated parm
- EVOO, to combine
- Salt, to taste
Place all ingredients except EVOO and salt in a blender and pulse until smooth. Add EVOO until texture is smoother. Add to heated pasta and stir to combine. Salt to taste.
