This Loaded Potato Protein Soup is the ultimate comfort food makeover: creamy, hearty, and packed with protein! Tender potatoes, shredded chicken, reduced-fat cheddar, and crispy bacon come together with Greek yogurt for a rich, satisfying soup without all the heavy ingredients. Smoked paprika, thyme, garlic, and onion add layers of flavor, while green onions give it the perfect fresh finish. It’s a cozy, protein-packed meal that proves comfort food can absolutely fit into your goals!

Ingredients:

  1. 2 lbs russet potatoes, peeled and cubed
  2. 4 cups low-sodium chicken broth
  3. 1 cup 1% milk
  4. 1 cup plain nonfat Greek yogurt
  5. 8 oz cooked boneless, skinless chicken breast, shredded
  6. 4 oz reduced-fat sharp cheddar cheese, shredded
  7. 4 slices center-cut bacon, cooked and crumbled (you can sub turkey bacon)
  8. 1 medium yellow onion, diced
  9. 2 cloves garlic, minced
  10. 1 tsp salt
  11. ½ tsp black pepper
  12. ½ tsp smoked paprika
  13. ½ tsp dried thyme
  14. 2 tbsp chopped green onions, for topping

Instructions:

Add the potatoes, onion, garlic, chicken broth, salt, pepper, paprika and thyme to a large pot. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until the potatoes are tender. Remove about 2 cups of the cooked potatoes and broth and blend until smooth. Return the blended mixture to the pot to create a creamy texture while keeping some potato chunks. Stir in the milk, Greek yogurt, shredded chicken and cheddar. Heat gently until warmed through and the cheese melts. Don’t boil after adding the yogurt. Divide into 6 bowls and top with crumbled bacon and green onions.
